"Beauty from the Inside Out"

Healthy Recipes

We all know by now that what we put in our bodies affects not only the way we feel, but the way we LOOK. This is where you will find my favorite recipes to keep your bodies their Radiantly Beautiful Best. There will be more additions every week, so please check back regularly!

Note: These simple recipes require a high speed blender. I use a Vitamix, which I feel I couldn’t live without. However, you CAN use a regular blender, you will just need to chop the ingredients a bit before adding.

I began making variations of this drink after I bought my vitamix. Like so many, I have very limited time in the morning but wanted to flood my body with nutrients and have the energy to get through often hectic days. I had many friends telling me they “Would love to eat healthily, if only they had the time.” This “drink” is the perfect answer.  Below is the original, but feel free to alter it according to taste or what you happen to have in the fridge.

Note: Please try to use organic whenever possible, and wash all non frozen produce before using. :)

  • 2-3 cups kale or baby kale. (Spinach may be substituted.)
  • 1 large carrot
  • 1/2 cup frozen berries (I like to mix blueberries, raspberries, and strawberries)
  • 1/2 banana
  • 1/2 apple
  • 1 beet, peeled (if desired)
  • 2tbs raw flaxseed (if desired)
  • 1 scoop whey protein powder (if desired)

Blend all ingredients with two cups of water, adding a little apple juice if you prefer more sweetness. Start blending on low, moving the speed up to ten for a few seconds if using a vitamix. I like to leave mine a little on the chunky side so that my digestive system still has to do some of the work, fending off hunger a bit longer.  Serves 2. Feel free to play around with the ingredients and combos to suit your taste!

My daughter Lily is a somewhat picky eater. I hate admitting this, as I come from a family that can REALLY eat, no pickiness involved. I came up with this as a way to get more healthy calories in to her while also packing a big nutritional punch. I make this everyday for breakfast, but it can be enjoyed anytime for a quick pick me up. It truly tastes just like a chocolate peanut butter milkshake!

  • 1 handful baby kale or spinach
  • 1/2 banana
  • 1 TBS almond butter or no-sugar peanut butter (any nut butter is fine)
  • 4-5 frozen strawberries
  • 1 cup almond or rice milk
  • 1 1/2 TBS raw cocoa powder (adjust to taste)

Mix all ingredients in blender, gradually moving to high speed for about 20-30 seconds. Makes one serving.

Perfect Pesto, PRONTO!

I’m always looking to create recipes that are not only healthy, but incredibly delicious. I came up with this nutrient packed “pesto” while trying to think of a way to use a variety of summer fresh veggies in an easy fashion. You can switch up the ingredients according to taste or what you happen to have on hand, or growing in the garden. (Works beautifully with lightly steamed broccoli and asparagus.) The basic recipe is as follows:

2 cups fresh basil

1 cup kale or baby spinach

1/2 cup cilantro (optional)

1 large carrot

1-2 cloves peeled garlic

Juice of 1/2 lemon

1/2 cup grated fresh parmesan

1/2 cup cold pressed olive oil

Mix all ingredients in a high speed blender of food processor, gradually pouring in olive oil. This is wonderful over your favorite pasta, but I also use it as a topping for everything, from steamed veggies to fish!  Keeps in the refrigerator for up to 5 days.
